Ingredients to make Basque cake:

1. We prepare the ingredients for the elaboration of the Basque cake. In total, between the cake and the custard, we will use five eggs, although of some we will only use the yolk.





2. We start with the mass of the cake. Lets pour the flour and yeast in a large bowl and mix well.





3. Next we add the sugar, the skin of the grated lemon, the butter, the two complete eggs and an additional yolk.





4. We mix well, using a fork or the rods. We have to let it rest for at least an hour, covering the bowl with a cloth.





5. While the cake paste rests, we are dedicated to the preparation of the custard. This is a quick and easy version, in which we use the microwave. We introduce all the ingredients into a bowl: the milk, the two egg yolks, the six tablespoons of sugar, the cornstarch and a little cinnamon to taste.





6. We beat everything well to eliminate possible lumps, and then we introduce the mixture into the microwave, three minutes at 800W of power. After this time we take it out, stir well and heat it again to the microwave, this time two minutes.





7. The custard is already prepared.





8. Now we ride the cake. In a removable mold suitable in the oven, we first extend a layer with the cake paste. With the help of a spoon we form a homogeneous layer. Above we pour the custard, also uniformly. The last layer corresponds again to the cake.





9. With the preheated oven previously, we introduce the cake inside and let it cook at 180ºC for 45 minutes. After this time, we let it cool a little and to suck your fingers!
