Bartolos recipe

1. We will first prepare the syrup. In a large pot we put the sugar and water and leave it over medium heat until we about strand. We stir from time to time. 2. We are placing the broken dough in the molds. We leave a little dough to make the strips that we will place above the filling. 3. When we have the syrup we ready we remove a little in a glass to paint the bartols before baking them. We preheat the oven to 180ºC. We add the ground almond and the 3 beaten yolks to the syrup pot. We stir everything well and fill the molds. We put the strips and paint with the syrup we had separated. 4. We bake at 180ºC for approximately 20 minutes, until you see that golden brown. 5. Once baked we get out of the oven and let cool before unmolding. We are very careful to pass a knife through the inner edge of the mold and the bartolo will come out without problems. With silicone molds, surely they will come out much better and we save the knife.
