1. Use an electric rod blender and start beating egg whites until they are about to snow. To achieve this, hit maximum power making surround movements with the rods.
2. See adding the sugar little by little, while beating softly and enveloping, from the center up. Add the lemon zest and vanilla. Check that sugar has been completely integrated. If you have doubts you can take a look at the Swiss meringue recipes and Italian meringue.
Trick: If you want to make colored sighs you can add a little dye in this step.
3. To make the sighs, you can add spoonfuls of meringue in a baking sheet lined with paraffin paper or use a pastry bag to give it its characteristic shape.
4. Kitchen in the preheated oven at 100ºC for about 15-20 minutes. Let stand for a few minutes and then you can enjoy the delicious meringue sighs.
