I return with another Christmas sweet. A typical Germany, within what are known as Emweihnachtsplätzen/EM or Christmas cookies. These that I share with recipes, the Emhaselnüssmakronen/EM or macarrones of hazelnut, are a real delight and on top of and very easy to do. There are those who do variants of these replacing the hazelnut with another dry fruit, and they are also great. But these are the typical and they go crazy. Y believe that by that I say everything. You have to try them!

Ingredients to make hazelnut macarons – Haselnüssmakronen: |
250 grams of ground hazelnut 3 units of or 4 clear (according to size) 175 grams of sugar (or equivalent sweetener in the same quantity) 1 pinch of salt ¼ teaspoon of cinnamon powder avellanas whole (1 per macarrón) Circular wafers (optional) |

Ingredients to make hazelnut macarons – Haselnüssmakronen:
1. With some rods we beat the whites with the pinch of salt until they get white and begin to gain consistency. You don have to get ready.
2. Then we add the sugar, little by little, until we get a firm meringue and form peaks.
3. We now add the almond and cinnamon and mix carefully, with soft circular movements until a homogeneous mass is obtained.
4. We put the mixture of hazelnut macaroni in a pastry sleeve and we are forming small circles or mounds.
5. Finally, we place on each one an entire hazelnut. It is usually used peeled ground, whitish color, and put on a hazelnut with skin. This is a clear macarrón with the dark stop. In my case, the ground hazelnut I had was with skin and yet the entire hazelnuts were peeled. As for flavor there is no difference, but I wanted to comment in case you see photos of the traditional Germans and surprise you. I did it right backwards 🙂
Trick: In Germany you will find them in both ways, with and without circular wafers at the bottom. I didn put them.
6. Bake the HASELNÜSSMAKRONEN in the already hot oven at 150 ºC about 20-25 minutes, until we see that they have been golden. Once ready, take them out and let them rest on a rack until they are totally cold. In a can they endure weeks, so many are usually done at once, so that all parties last. You will see how delicious these hazelnut macaroni remain, and as you can see they are very easy. Do not stop trying them!
