Amaretti crispy cake recipe

300 grams of amaretti
5 Egg units
175 grams of sugar
90 grams of cocoa powder
250 grams of creme fraiche
1 pinch of salt

Ingredients to make a crispy cake of Amaretti:

1. We will start with the Amaretti. We crush 250 gr of Amaretti on the one hand and reserve. The remaining 50 GR will leave them in small pieces and then cover the cake with them and also reserve, separated from the other 250 gr.

2. We force the mold base with baking paper and preheat the oven at 160ºC. In a bowl we mix the cocoa well with the crushed morals. In another large bowl we add the sugar, the pinch of salt, the eggs and beat well until we get a foamy and pale cream. Now we add the Amaretti and Cocoa mixture and stir again everything until the well -mixed ingredients are. Finally, add the Fraiche Creme and mix everything well.





3. We put the whole mixture in the mold so that we are well distributed and add the trocced moore. Bake at 160ºC for 40 – 45 minutes using a stick or a knife to know if it is ready as if it were a cake. If we see that we start to brown too much we cover it with aluminum foil.





4. Once ready we take out of the oven and unmold but before we pass a knife through the inner edge of the mold so that we are not broken when unmolding it.
