Almond foam recipe

Dip the gelatin in cold water until it softens.

Almond foam ingredients:
50 cl. milk
8 you. egg yolk
150 gr. sugar
150 gr. almond (toast and ground)
10 ud. Egg Clara
50 Cl. liquid cream
1 jet almond liquor (amaretto)

2. Boil the milk, remove from the heat and add the gelatin to which the water will have drained, and remove to dissolve.

3. In a container, mix the yolks, the ground almond and 50 grs. of sugar.

4. Mount the whites with 50 grs. of sugar and cream with the remaining sugar (the last 50 grs.).

5. Unite, little by little, the milk with the mixture of yolks, when everything is incorporated, wait for it to cool and then, add a splash of almond liquor, the whites and finally, the cream.

6. Mix well and leave in the fridge until the foam is served.
