However, in the United States, punch is a traditional drink that is also taken in the United Kingdom for Christmas holidays and the end of the year. In recipes we have opted for a vegan punch and, therefore, without eggs. This drink is made of coconut milk, spices, maple syrup and nuts. 1. We gather all the ingredients to prepare the vegan egg punch.
2. We put the anacardos soak. It is important to hydrate the anacardos the night before or at least 2 hours in advance so that it is easier to crush them with the blender and do not remain so many lumps. Anacardo is a fruit rich in calcium, potassium, iron, vitamin B and phosphorus.
3. In a glass for blender we mix the coconut milk with the anacardos and begin to beat. We have used Tetrabrik coconut drink because it is lighter, but homemade coconut milk are also good options. We beat until the nuts are completely crushed.
4. Add the spices. To do this, we put a pinch of nutmeg and another pinch of ground cinnamon. You have to be careful with nutmeg because it has a lot of flavor and, if we pass, you can spoil the vegan egg punch.
5. We also add the maple syrup and beat again with the blender. If you don have arce syrup you can also put agave syrup. In the event that the drink has been very thick we can add a little water.
6. We put the vegan egg punch in the fridge and serve it cold with a little more ground cinnamon over. This vegan drink for Christmas can be prepared in advance and leave in the fridge for a day. If you want to try other varieties you can also prepare the traditional Mexican punch.
