Pisco Sour Sparkling

3 cups of pisco
1 cup of lemon juice
1 cup of rubber syrup
2 units of egg whites
12 ice cubes

Ingredients to make sparkling pisco:

1. Beat in a cocktail or liquefy the pisco with rubber syrup. Then add the lemon juice and mix well. Rubber syrup is nothing more than homemade sugar syrup.

2. Incorporate the chopped ice and, in the end, the egg whites to give that touch of foam. Blend well, until the clear one is foamy and serve in small vessels. The secret to get a sparkling pisco is to add the egg whites at the end, it does not matter if you do not do it in blender, but remember to shake well if you do it in a cocktail shaker traditional.

3. When serving, add a few drops of Angostura bitter to taste and voila. You already have your sparkling pisco and if you want to try other SOUR cocktails you can try the Sour whiskey or the famous Amaretto Sour, both are great.
