Ingredients to make cassava flour cookies:
1. Gather the necessary ingredients to prepare these gluten-free cassava flour cookies.
2. Beat the eggs with the sugar until the mixture is foamy. Add soft butter and mix again.
3. Add the other ingredients of cassava starch cookies and mix everything. To give a different taste, you can add instant coffee or cinnamon as I have done.
4. This must be the appearance of the dough after mixing well. Let stand 10 minutes in the refrigerator.
5. Take portions of mass and shape small balls. Place them on a silicone mat or oven tray greased with sulphurized or vegetable paper and crush them slightly. Bake the yucca cookies without flour for about 20 minutes at 180 ºC or until they are well golden.
Trick: It is preferable that the oven is pre -heed for a few minutes before cooking cookies.
