They are very easy to do and represent an excellent dessert that we could offer the little ones at home or our guests to finish the Christmas menu. Ingredients to make white chocolate alfajores: |
1 piece of egg 2 pieces of egg yolks 100 grams of sugar (½ cup) 1 teaspoon of vanilla essence 75 grams of butter (⅓ cup) 100 grams of wheat flour 175 grams of corn starch 1 cup of white cholocate for coverage 1 cup of dulce de leche or cajeta |

Ingredients to make white chocolate alfajores:

2. We start with the elaboration of the mass of the alfajores by placing sugar, butter, yolks, egg and vanilla essence in a deep bowl. Then, we integrate all these ingredients perfectly well with the help of an electric blender, and if we do not have one, with a spatula we can do it. We should be a homogeneous and lump mixture.
3. Now, we add the wheat flour and the corn starch, both previously sifted to prevent lumps from integrating them into the dough for alfajores. Again, we integrate everything perfectly, to form a dough that almost does not stick to the hands.
4. Once the dough is obtained, we wrap it on film paper and let it stand in the fridge for approximately 30 minutes so that white chocolate alfajores can be done without problems.
5. Once the rest time has passed, we remove the dough for alfajores from the refrigerator, flour the work table and stretch it with the help of a roller, leaving approximately 4 mm thick.
6. Now, with the help of a cookie cutter in a circular form, we cut circles to form the cornstarch alfajores and place them on an oven tray. It is not necessary for us to place them very spaced, since they hardly increase their size when baking.
Trick: We preheat the oven at 200 ºC.
7. Bake the alfajores for 8-10 minutes. We must not let them brown to avoid getting too hard cookies. Once ready, remove the maicena alfajores from the tray and let them cool.
8. Once cold, we begin to form the white chocolate alfajores! To do this, we take the cookies by peers, on one we place some cajeta or dulce de leche, and on top of the cream we leave the second cookie, forming small sandwiches, as we observe in the following image.
9. On the other hand, we take white chocolate for coverage and begin to melt in the water bath. When doing this step, we must be careful and prevent water from falling on chocolate, since it would spoil the white chocolate alfajores recipe.
10. Once ready, we cover chocolate the cajeta alfajores and let them cool for approximately 10 minutes. They must be completely covered, so that the guests cannot deduce what they are filled and are surprised to give the first bite to their white chocolate alfajor.
