1. Beat the eggs with milk, oil and sugar for 4 minutes at maximum power in the blender. If we do not have blender, we can beat the ingredients by hand or with a hand electric blender. To enhance the taste, we can use coconut milk instead of cows milk.





2. To continue with the coconut wet cake recipe, in a bowl we sift the wheat flour with the cornstarch. Then, we gradually add the mixture of flours to the blender and we are beating. It is important not to add all the flour at once because it will not be mixed properly.



Trick: If we don have blender, we also integrate the flour.





3. Finally, we add the grated coconut and baking powder, and integrate smoothly, making enveloping movements. As the taste of the coconut cake is to taste, we can add more grated coconut if we want.





4. We grease a mold about 20 cm in diameter. To do this, we have used butter and sugar instead of flour, since we will get a wet coconut cake.





5. We pour the dough and bake the damp coconut cake for 30 minutes, with the preheated oven at 180 ºC. Depending on the type of oven, cooking time can vary, so after 30 minutes we advise to examine the cake to check if you need more time.





6. Once we have the coconut cake ready, so that they are even more wet we can prepare a syrup by heating coconut and water oil, clicking the cake and distributing this mixture to penetrate it. Another totally valid option would be to heat in a pan jug or lemon jugo with sugar to taste. We must cool on a rack and serve.
