Torrijas are a traditional sweet that consists of slices of bread soaked in milk, battered in eggs and fried. This recipe that I share with recipes is a version of vegan torrijas without dairy and without egg. We will use soy milk instead of cows milk and chickpea flour to replace the egg. As a result there are torrijas with juicy and soft vegetable milk inside and toasted on the outside, with a touch to cinnamon, turmeric, anise and lemon zest.

Ingredients to make vegan torrijas:
1. In a mixture bol a quarter of a glass of soy milk with chickpea flour and beat with the fork to make the consistency of a beaten egg.
2. Add the turmeric, anise and a half teaspoon of lemon zest and remove.
3. In another bowl mix the remaining soy milk with cinnamon, vanilla essence and 2 tablespoons of sugar.
4. cut the bread into slices of 1 centimeter and a half thick and pass each of the slices first through the bowl with the milk and cinnamon soaking them well and then through the bowl with the chickpea flour.
5. Heat a pan with oil and fry the toasts with vegetable milk on both sides until brown.
