Preheat the oven to 180º. Prepare in a mold for muffins, paper capsules and reserve.

2. In a medium bowl we mix the flour, yeast and salt. We reserve.
3. In the Bowl of the Kitchenaid (or the bowl of an electric blender) we can the butter and we started to mix until the butter is soft; Add the sugar little by little and continue mixing with the blender until you get a spongy mixture. We beat 3 minutes.
4. Add the eggs, one by one, beating well until they are fully integrated into the mixture. We add the lemon skin and the pulp of 2 fruits of the passion.
5. Now we will add the flour mixture, in three phases, and we will alternate the milk, also in three phases.
6. Every time milk or flour is added, we mix well until all the ingredients have been incorporated.
7. We pour the mixture into paper capsules, 3/4 parts of its capacity.
8. Bake 25 minutes at 180º.
9. Final assembly of the cupcake: We take out the cupcakes, let them cool.
10. We remove the LEMON CURD from the refrigerator and add the pulp of two passion fruit.
11. When the cupcakes have cooled, with the help of a knife or a spoon, we make a hole in the center of the cupcake, in this hole we introduce the lemon curd that we have mixed with the passion fruit.
12. We take the meringue and introduce it into a pastry bag, and cover the cupcake with the meringue.
13. You can take the cupcake without toasting the meringue in the oven because we have already heated the clearing previously and its texture is ideal, or, if we prefer we can put a couple of minutes in the baking gratin.
