The dead bread is a special type of bread that is prepared in Mexico for the celebration of the Day of the Dead, on November 1 and 2. It is not a daily consumption bread although it is often prepared since August, since these festivities extend from days to whole weeks, depending on the countrys region. Throughout the country, many of this day of the dead can be found. The most common carry sesame or sprinkled sugar on top. In almost all cases, the bread of the dead is distinguished by its characteristic mass balls, which represent the bones of the deceased to whom the bread is dedicated. Ingredients to make traditional dead bread:
1. Hydrates the yeast in 8 tablespoons of warm water, once the yeast is well integrated add a flour spoon and a spoonful of sugar to form a paste. Mix well and let it rest in a warm place until the volume doubles.
Trick: If you do not find dry yeast and you only find the fresh, use twice what the recipe indicates.
2. In a broad container, it forms a fountain with 500 g of flour, orange zest, sugar and a pinch of salt to continue the recipe for traditional dead bread.
Trick: If necessary, you can add 10 grams of bread improper.
3. In the flour source, it incorporates eggs, milk and teaspoon of orange blossom water.
4. Add the already fermented yeast, as shown in the photograph.
5. Mix all the ingredients with your hands, just what is necessary to incorporate them.
6. Add margarine and intress it to the dough of homemade dead bread. For a better knead, it is important that this product is at room temperature.
7. knead for 20 minutes to incorporate margarine and sugar well.
8. When you knead, gradually add the amount of flour needed until the dough is not hit in your hands and it has a slightly spongy and smooth consistency. Cover the dough with a humid cloth and let it stand at room temperature in a warm place for a minimum of 3 hours to allow its size to double.
9. Once the rest time has passed, hits the dough to remove excess air, knead briefly and divide into balls the desired size. Do not forget to reserve a dough portion for decorations.
Trick: Keep in mind that dough balls will double their size during the second time of rest.

16. sprinkle sesiles of sesames on the dead bread with the egg yolk and bake at 180 ºC of 25 to 35 minutes or until the bread is slightly golden and well cooked. Baked time can vary depending on your oven.
17. For the dead bread decorated with sugar, you just have to wait for the bread to be slightly cooled, melt some butter to spread the bread and sprinkle with refined sugar.
