Sugar -free banana sponge cake

To prepare this banana cake I have decided to use Stevia instead of common sugar in order to make a healthy dessert without losing flavor. Since the banana or mature bananas already contains enough sugar and presents a very sweet flavor, why add more to the recipe? Ingredients to make banana sponge cake:
1 cup of whole wheat flour
½ cup of common wheat flour
½ cup of corn starch (62½ grams)
4 tablespoons of coconut oil
4 tablespoons of stevia
¾ cup of milk (180 milliliters)

3 eggs
1 tablespoon baking powder
6 ripe bananas
1 pinch of cinnamon powder

Ingredients to make banana sponge cake:

1. To start preparing this healthy banana cake, the first thing we must do is separate the yolks from egg whites. Then, beat the whites about to snow and reserve them for a moment.





2. We take a separate container and beat the yolks with coconut oil and stevia until these ingredients completely integrate. It is very important to keep the amounts of Stevia, since if we pass the banana cake it can be too sweet. On the other hand, we use coconut oil to replace the butter and obtain a low calorie sponge cake.





3. Add the common wheat flour, the integral wheat flour and the corn starch to the mixture, alternating the three flours with the milk and stirring with a spoon or spatula.



Trick: We sift the three types of flour to obtain a softer and smoother mixture.





4. When the previous ingredients are well integrated, add the beaten egg galas and mix making soft surround movements to prevent them from losing their volume.





5. Finally, we incorporate the yeast into the mass of the banana sponge sponge cake. Although this cake is made with sweetener, if you are diabetic I recommend that you consult with your doctor whether or not you can consume it, since the banana contains a high sugar percentage.
