Spongy sponge cake recipe with Thermomix

Ingredients to make spongy cake with Thermomix:
1 Egg unit (about 50 gr.)
15 grams of ground almonds
15 grams of sugar
15 grams of flour
25 grams of orange juice
1 teaspoon of yeast type Royal
1 1/4 siphon unit 1/4 With an air load
3 units of disposable plastic vessels

Ingredients to make spongy cake with Thermomix:

1. We weigh the sugar and flour to be able to make the sponge sponge cake recipe.





2. Then, we add to the Thermomix the ground almond, sugar, royal yeast and flour. We program it for 15 seconds at maximum power and remove. If you do not have ground almond and use entire almond, you will have to leave it until the almond is done flour.





3. We squeeze the orange and put the juice in the arm blender glass along with the egg and beat for 4 seconds. We add the mixture of almonds and beat 10 more seconds to mix everything and obtain a homogeneous and creamy mass. If you prefer, you can do it directly in the Thermomix putting all the ingredients at maximum power until the creamy mixture.





4. We pass the entire mixture through a very fine strainer so that the siphon does not obstruct. As is a 1/4 siphon, with an air load it is enough. The siphon is what will give the appearance of sponge to our cake with Thermomix.





5. Before we use it we remove the siphon face down. Then, we introduce the cast mass into the siphon, we close and stir. We squeeze the thread of the air load and again shake the siphon so that the dough is mixed well with the air. We reserve the siphon in the refrigerator for a couple of hours, I did it the day before.





6. After the rest time, we make three cuts at the bottom of some plastic vessels, we pour the dough half of the vessels. If you want, you can spread some butter in the vessels to make it easier to unmold the spongy cake.





7. We put the glasses one by one in the microwave and heat them at maximum power (900 w) for 40 seconds. We take it out of the microwave and let it cool down. To unmold, we can take a knife to separate the sponge cake.
