Ingredients to make spongy almond cake:
5 eggs
250 grams of extrafine almond flour
200 grams of wheat flour
250 grams of sugar (1¼ cups)
150 grams of chopped almonds
100 milliliters of sunflower oil
200 milliliters of milk (whole or almond milk )
1 teaspoon of vanilla essence
2 teaspoons of yeast (1 envelope)
1 pinch of dehydrated coconut (optional)

Ingredients to make spongy almond cake:

1. Preheat the oven before starting to prepare the cake mass. The temperature must be 180 ºC with heat up and down. 8. Enter the cake with almond flour into the preheated and bake for 40-45 minutes.





9. After baked time, check that almond cake is ready. You can prick a stick to check that it is well done inside and that it is not raw. If the stick comes out clean, it will be ready.





10. Remove the almond flour cake from the oven and let it rest a few minutes before removing it from the mold.

11. Unmold the almond cake and let it cool completely.
