We can beat the whole eggs with the sugar, in a first step (an essential step), or separate yolks and clear and add the whites mounted to the point of snow in a final step. In either way, the genus cake for cakes is great. I usually do the first option, since it seems more comfortable. Of course, I insist that the passage of the shake of the eggs and the sugar because it is essential. 1. We put the sugar and eggs in a bowl and beat with the rods until obtaining a whitish mixture and triples the initial volume. To do this we must beat quite a while, at least about 15 or 20 minutes. This step is essential, since the eggs depends on the cake grows and is spongy.
Trick: If we doubt or want to make sure that then up well in the oven we can add yeast but I already tell you, if it is done well, it would not be necessary. I didn put it, I just beat carefully and the result was great.
2. Next we add the flour. We will have to sift it before, and better do it 2 or 3 times. We add it to the previous mixture little by little and mix carefully, with soft movements and envelopes so as not to lower the mass of the genus cake for cakes, so that it does not lose the air acquired during the shake.
3. When the dough is ready it is important to bake it at the moment. If the air present in the dough obtained when beating will be lost and the dough will not rise, or not as good. That is why we must have the oven ready, preheated at 180º C above and below. 4. past the baked time and making sure that the genus cake is well done by clinging with a stick in the center (if the stick is ready it should leave clean and dry), we take out the cake and let it cool a little before unmold. Then we place it on a rack until it cools at all. This sponge sponge cake will remain so if it is well done. It is delicious and the cakes are great.
