The soul cakes are a typical sweet in many areas of Spain that, in general, will prepare at Christmas and depending on the region the filling can change although they are always sweet. On this occasion we will take advantage of all that flavor, as is done in Aragon with pumpkin jam, but easily and quickly with a puff pastry.

Ingredients to make cakes of soul puff pastry:
1. To begin the preparation of traditional soul cakes, the first thing we must do is peel and chop the pumpkin. Then, place the pieces in a fountain together with the sugar and honey and bake at 190º for 40 minutes. Check in so much cooking and remove the mixture.
2. When 5 minutes are left to cook the pumpkin, open the oven and sprinkle the star anise. Then let the flavors absorb and put the preparation to rest until it takes room temperature.
3. To finish the preparation of the filling of the soul cakes, pass the pumpkin through a strainer and take everything to the crusher. Do not leave it completely liquid, the filling must be a consistent but soft puree.
4. Then extend the sheets and cut puff pastry circles with a short pastes or a glass. Make the mass circles of size that you want your soul to be.
5. Fill in each circle of dough with a portion of the pumpkin preparation and seal the edges of the empanadilla with beaten egg. You can decorate the edges to your liking or fold them in to make the classic shape of these cakes.
