1. To start, in a bowl, mix the soft butter with the sugar, until obtaining a soft and pale yellow mixture.
2. Add the wheat flour and the corn starch (cornstarch), previously sifted. Mix everything until you get a soft dough for your Scottish butter cookies, it is not necessary to work it a lot.
3. When the mass of Scottish cookies is ready, wrap on film paper and leads to the fridge for 1 hour.
4. stretch the dough with a thickness of 1 cm, cut into small rectangles and, with a fork, click each of the Scottish cookies. Place homemade cookies in a silicone mat and bake at 190 ºC for 15 minutes.
Trick: Each oven is different, so see checking your cookies until you make sure they are golden and lists.
