2. In a second bowl we mix wet ingredients: oil, sugar and vanilla extract. We do not add the milk, since this we will add it later. In addition to olive oil, you can also use coconut oil.

Trick: Non -refined oils are healthier than margarine or butter. If you prefer to use margarine, we recommend you opt for a hydrogenated fat or refined oils.

3. We gradually incorporate dry ingredients to humid, carefully to avoid lumps. We are mixing until you get a compact mass that will be some dry.

4. We add the milk and mix well. If we see that the dough of oatmeal cookies is still dry (we need to be wet, something sticky in the hands), add 1 or 2 more tablespoons of milk until the proper consistency is obtained.

Trick: To have some light oatmeal cookies, we recommend using skim milk.

5. We make a ball with the dough and wrap it on film paper. We let it stand in the fridge for at least half an hour. This step is not essential but recommended for the healthy oat cookies that we are preparing to remain with a crispy texture.

6. After the rest time, we stretch the dough with a roller and cut the cookies with the desired shape and size.

7. We place the cookies on a baking sheet lined with vegetable paper and put it in the oven already hot at 180 ºC, with heat up and down. We bake between 12 and 15 minutes. It is not convenient to spend time so that the cookies are not harsh when cooling (I left them 12 or 13 minutes). If you are hard, in this article you will find the causes and solutions: why do I have the cookies hard?

Trick: If you do not want to risk that they do not brown enough, in the middle of cooking or something else you can upload the tall tray.
