Ingredients to make a kings roscón without mother dough:
1. Before getting to work with the homemade kings roscón, we let all the ingredients ready and we verify that we do not miss anything.
2. Now, we start with the elaboration of the Roscón de Reyes without Mother Mass! We take a bowl and dilute yeast with temperate milk. Made this, we incorporate the sugar and mix well to let the preparation stand for 2-3 minutes. Meanwhile, in another container we mix the flour with the rum, the orange zest and the orange blossom. Then, we gradually incorporate the yeast mixed with milk and sugar.
3. Add the egg yolk and the whole egg, the chopped butter and mix well to integrate these ingredients into the dough of the homemade kings roscón.
4. We cover the container with film paper and let the dough stand so that it doubles its volume. Keep in mind that this step is essential to get a spongy kings, so try not to jump it.
Trick: If you place the container with the dough near a radiator, it will slight much faster.
5. After the rest time, we put the dough on the oven tray lined with baking paper and give it a rosco shape. If you do not have much time to leave the dough rest the necessary hours, the result will be a somewhat more sticky dough, like mine. However, you will see that the Roscón de Reyes is equally delicious, so do not worry about its final flavor and consistency.
6. To prevent the rosco from getting rid of, you can place a metal ring in the center, as I show in the photograph. Then, we paint the surface with beaten egg and decorate the roscón de reyes with the fruit confit, the fillet almonds and the sugar. The decoration is to taste, so use the fruits that you like the most!
Trick: The ideal would be to let it rest a little more to increase volume.
7. We preheat the oven at 180 ºC. When hot, we bake the roscón de kings without mother dough for 20 minutes, or until we see that it is golden. We remove it from the oven and let it cool on a rack before serving it.
