Recipe for delicious lemon muffins

We preheat the oven to 200ºC. We prepare a mold of 12 muffins with little paper or grease it very well.

100g of molten butter
150 g of sugar
250g of flour
1 teaspoon of yeast [2]
1/2 teaspoon of salt
120g of white chocolate (in drops or chopped)
1/2 teaspoon of bicarbonate
juice of 1 small lemon
2 eggs
150 g of yogurt
zest of 1 lemon
lemon curd (less than 1/2 teaspoon per muffin)

2. In a bowl, we mix the flour with yeast, salt, bicarbonate and white chocolate. We reserve.

3. In another bowl, we beat the rest of the ingredients to homogenize it. Do not bothered to take out the electric rods, for a Muffins recipe it is never worth it.
