Ingredients to make Mexican alfajores with coconut:

1. The first step is to gather all the ingredients to prepare these delicious alfajores with coconut.

2. In a container we deposit the butter, add the sugar and proceed to beat, until the lumps of sugar disappear.

Trick: Butter must be at room temperature.

3. We immediately add the yolks, and when the yolks have been integrated, we add the entire egg.

4. Then, add the lemon zest and continue beating until integrating.

5. Then we add the essence of vanilla and beat so that our ingredients are incorporated well. We also add the rum.

Trick: The rum can be replaced by whiskey or cognac.

6. In a separate container we will mix wheat flour, cornstarch, baking powder, bicarbonate and the pinch of salt. Then we will add this mixture little by little to the previous preparation.

7. Once the ingredients have been well integrated, we make a ball with the dough, cover it with an adherent paper and let it stand for 20 minutes in the fridge.

Trick: If we do not have adherent paper, we can place it inside a nylon bag.

8. To shape the coconut alfajores, we sprinkle flour and also cover a roller to prevent the dough from sticking. We proceed to extend it until we are approximately 0.5 cm and then we will cut the cookies. We put the surplus together and extend it again until the dough ends. Help with a palita we lift the alfajores and place them in a baking tray.

Trick: To facilitate the flattening of the dough it is advisable to divide it into two.

9. We preheat the oven at 170 ° C since we remove the mass from the refrigerator or fridge. Before placing the Mexican alfajores we cover the tray with waxed paper. Bake the alfajores for 10-15 minutes.

10. Baked alfajores are light color, do not take a golden color. We let them cool, carefully remove them and we are weaping. To do this, we spread sufficient amount of dulce de leche to a cookie and put another on it, turn one over another to exceed the sweet.

11. We place the side of the alfajor on the grated coconut as shown in the photograph.

12. Praise! To enjoy Mexican alfajores with coconut accompanied with our favorite drink, such as the typical champurrado or atole from Guayaba.
