Ingredients to make home cake without milk or yogurt:
1. Before starting to make the spongy cake without lactose, we let all the ingredients on the table ready to facilitate the subsequent work.
2. Once all the ingredients are ready, we separate the yolks from the egg whites and reserve them in separate containers.
3. Now, beat the whites until we obtain the desired consistency, as if it were a homemade meringue. This step is carried out precisely to ensure that cake without milk or yogurt is very spongy, so that we recommend it with electric rods preferably.
4. Then, add the sugar to the clear beaten little by little and while still beating, until a smooth, bright and homogeneous cream.
5. Add the egg yolks little by little and continue beating for another two minutes to integrate them without losing volume.
6. Once the yolks are well integrated, to continue with the elaboration of the cake without milk or yogurt, we incorporate the sifted flour together with the baking powder and integrate these ingredients with the help of a spatula or wooden spoon, making enveloping movements soft. The result must be a spongy dough.

7. We grease and flour the mold. We have opted for a circular mold with a hole in the center so that the homemade sponge cake has a rosco shape, but you can use any other round mold of about 20-25 cm in diameter or elongated. We pour the dough and bake the lactose -free cake for 20 minutes with the preheated oven at 200 ºC.
8. Depending on the type of oven, it may be more cooking time, so we recommend watching the oven and check with a stick if the cake is ready.
