The traditional golden rule for the halva is to count (measurements) 1 (olive oil), 2 (semolina), 3 (sugar), 4 (water). Currently, sugar is usually reduced from 3 to 2 measurements and some vegetable oil is used instead of olive.

1 cup olive oil 2 cups of semolina 3 cups of sugar 4 cups of water 100 gr. of peeled almonds 2 tablespoons of ground cinnamon |

2. Put oil in a large saucepan over medium heat and when it almost starts to smoke, add the semolina to few, continuously moving until it puts a light brown color. Reduce the fire, add the almonds, mix and continue fringing until reaching the point (color) that you like (without burning, of course). Meanwhile, prepare the syrup dissolving 02 cups of sugar in the water. Boil the mixture for 3 to 4 minutes.
3. Remove the semolina from the fire and add the syrup moving. Take the saucepan again and move until the mixture is uniform. When almost all moisture is absorbed, add the remaining sugar.
4. Remove from heat and cover with a clean cloth for about 10 minutes. Then pour into a mold, unmold on a plate when they cool and sprinkle cinnamon.
