1. We gather all the ingredients to prepare gluten-free polvorones.
2. We brown the rice flour and cornstarch in the oven at 180 ºC until they take a roasted color.
3. In another container, we mix the rest of the ingredients: the pig butter with the sugar, the cinnamon and the egg.
4. Add the sifted flour little by little to the previous mass. For this it is preferable that the flour mixture is cold.
5. Once the dough is formed, we knead with a roller and shape the gluten-free polvorones.
6. Sprinkle the gluten-free polvorones with sesame and cool in the fridge for half an hour.
