3 cups of pastry flour (420 grams)
2 cups of sugar (400 grams)
1 cup of milk (240 milliliters)
3 eggs
2 tablespoons of butter soups

Ingredients to make economical and easy:

1. Beat the eggs with the sugar until you get a homogeneous mixture. For a more spongy economic cake, we recommend separating the whites from the yolks and now mixing the yolks.





2. Add the butter and milk and continue beating. We can use cows milk or any type of vegetable milk that we like, such as almond milk, coconut milk or oat milk.





3. We sift the flour with the baking powders directly on the bowl in which we are preparing the mass of the economic and easy cake. We mix with a spatula or spoon, making enveloping movements.





4. We incorporate the lemon zest and/or the essence of vanilla and mix. If we decide to separate the yolks from the whites, beat the whites and add them at the end so that the dough does not lose volume.





5. We preheat the oven to 180 ºC, grease a mold with butter and flour and pour the dough. We recommend using a round mold about 20 cm in diameter or rectangular. Bake the easy cake for approximately 40 minutes. Depending on the type of oven, time can vary, so that we advise being attentive.





6. We perform the stick test and when it is ready we leave it about 5 minutes inside the oven but with the door open. Then, we reserve it on a rack until we can unmold it.
