According to the area, they are known as Spekulaitus, Spéculos or Speculas. There are also variants: there are spicy, butter and almond (which also carry spices). All are very good, but this time I decided to try the spices, or Gewürz, in German, and were wonderful. With a smell and sensational flavor. My husband, as a good German, was the final judge and I only tell you that they not only passed the test, but that they passed it with note. They were really very good! Ingredients to make spicy Christmas cookies – Gewürz Spekulatius:
1. In a bowl we mix the flour, salt, yeast and spices. We reserve. If you do not have the mixture for Spekulatius, connect 2 teaspoons of cinnamon, 1/4 of clove teaspoon and another 1/4 of cardamom. Youll see how good it looks!
Trick: I used oatmeal.
2. In a bowl we beat the margarine with the sugar or sweetener. It is important that margarine is at room temperature so that it is very better and the speech Christmas cookies are perfect.
3. Add the egg and beat again when the previous ingredients are well integrated and have a creamy clear yellow mass.
4. We add the flour mixture. First, we add half the amount and then the rest little by little. We knead the mass of Christmas cookies.
5. Add milk if the dough is very dry, very likely. The amount, by eye, will be necessary to obtain adequate consistency.
6. We make a ball, or two, when we have a well integrated mass, and wrap them with transparent film. We put them in the refrigerator 1 or 2 hours to rest and proceed with the preparation of the spicy Christmas cookies.
7. After time, we turn on the oven to 170-175 ºC with heat up and down. While the oven is heated, we flatten the dough with the help of a roller. If we have a Spekulatius special roller mold like mine (see photo), we need the dough to be about 3 mm thick. The mold comes with a small guide to get an idea. This is necessary for the mold drawings to be marked and, in addition, the cookies are well separated, since with the roller themselves they are cut completely or almost. In the areas with a lot of recesses I helped myself with the tip of a knife to separate better and not break the different forms. If you do not have this mold, it does not matter, use the one you have, the one you like the most.
8. Once the speech Christmas cookies are cut, we put them on a vegetable paper baking source and bake for 13-15 minutes according to the thickness.
9. Past time and when they have taken some color, we take them out and let them cool on a rack. At this point you will smell all the kitchen in pure glory. They have a spectacular spicy smell and flavor. I keep them in a can and endure phenomenal for quite some time …, although they generally do not last long because they are so good that it is almost impossible to contain themselves, heh, heh.
