Ingredients to make carrot and chocolate cupcakes:
2 eggs
½ cup of coconut oil (measured being solid)
2 cups of minced carrot
1 tablespoon of grated ginger
2 tablespoons of honey
2 tablespoons of chia seeds
1 cup of whole wheat flour
1 cup of brown (or coconut) sugar

Ingredients to make carrot and chocolate cupcakes:

1. In a bowl we mix the dry ingredients: flour, brown sugar, chia and baking powder. Reserve.





2. In the blender, we beat the carrots with the eggs, the coconut oil, the grated ginger and the honey.





3. Mix the dry ingredients with liquids until you get a homogeneous and smooth dough to make carrot and chocolate muffins.





4. Add the chocolate pieces a little floured to the dough. The flour will make them sink and stay at the bottom of carrot and chocolate muffins.





5. We distribute the dough in the appropriate molds and bake the chocolate and carrot cupcakes preheated at 180 ºC for about 15/20 minutes, or until clicking them in the center with a stick it comes out clean.
