250 grams of sugar glas

Ingredients to make calissans dAix – a typical delicious French sweet:

1. To make our calissans dAix, we put the ground almond, the 250 g of icing sugar and the two jams in a pot. We mix and put on the fire, mixing constantly so that the dough does not stick. Lets cook between 5 and 10 minutes. The dough will have to take off from the walls of the saucepan.





2. Let the dough cool. Then, we flour a work surface with gloss sugar or ground almond, we knead the dough and stretch with a roller equally sprinkled with a little pulverized sugar. We cut the calissans with the help of a horn, we knead the cuts again, to stretch and make home more homemade. We are putting every calisson on a baking sheet lined with sulphurized paper.





3. To make the Glasa, we will mix the egg white together with the Glass sugar.





4. With a small spatula, we put some glasa on the surface of each Calisson. We let the French sweets rest for about 10 minutes while preheating the oven at 150 ºC. When the oven is hot, we turn off and put the tray in the oven. We take 5 minutes later, let the Calisson cool 5 minutes and pass them to a rack to finish cooling. They will be ready to consume.
