1. For butter cookies with yolks to be perfect, it is recommended to integrate the ingredients following a specific order. Thus, we first mix the butter with the yolks.

2. Then, add the sugar and continue beating. Finally, we incorporate the flour and, as soon as we can, we start kneading with our hands. The result must be an elastic mass, without lumps and that is not stuck.



Trick: If it is very humid, we can add a little more flour, while if it is too dry, we can add more butter.

3. We make a ball, cover the mass of butter cookies and yolks with film paper and reserve it in the fridge for an hour.

4. When the indicated time has passed, we take out the mass of the fridge and preheat the oven at 180 ºC. While heating, we spread the dough with a roller and cut the cookies with the molds that we like best, or the mouth of a glass in its absence.
