Ingredients to make sweet potato panellets:
1. Before starting with the homemade panellets recipe, leave all ingredients ready and preheat the oven at 200 ºC.
2. Then, mix the ground almond with the sugar in a bowl with sufficient capacity. Done this, beat the eggs apart and incorporate them to this mixture. You can integrate the beaten eggs with a spoon or spatula.
3. Once well mixed, to continue with the panellet dough you must peel the sweet potato and chop it as you see in the image. In this way it will be easier for you to integrate it later.
4. Now add the sweet potato chopped to the mixture and love everything with your hands, but you will not be able to integrate it correctly. You must knead until a consistent mass, similar to that of the cookies but less compact. Let the dough of sweet potato panellets rest for two hours to harden a little.
5. Past time, knead again and make small balls with your hands to form homemade panellets. The balls should be very large the size of a golf ball. Then, prepare the ingredients for the decorations of the sweet potato panellets in separate containers.
6. To decorate the panellets, take a ball and blaze it in the pine nuts. With this ingredient you are likely to have to press the balls a little so that the pinions are well stuck.

Then bake them for 15-20 minutes, watching that they do not burn since depending on the power of the oven they can take less to be done.
10. When they are ready, remove them from the oven and let them cool before eating them.
