Bread torrijas are part of the traditional gastronomy of the Holy Week and Easter in Spain. They are made by cutting bread slices, soaking them in infused milk with cinnamon and fringing them in hot oil. However, over the years the traditional recipe has been adopting new forms and has given rise to the appearance of new homemade torrijas, some aromatizdas with orange, others with lemon, others thought especially for celiacs and others for those who follow A vegan diet. We have also wanted to transform the recipe for traditional toast and, therefore, we have used mold bread. Likewise, to do this healthier Holy Week dessert, we have decided to cook them in the oven, without any oil! 1. To start preparing the baked bimbo toast, the first thing we should do is heat the milk. We mix the sugar with the cinnamon and incorporate the mixture into the milk, together with the lemon zest. If you prefer, you can replace the lemon zest with orange, since both will help aromatize milk. For the recipe to be as healthy as possible, the ideal is to use skim or half -nacked milk. But, if you do not have any of these types, you can also use the whole without problems.
2. When it starts boiling, we lower the temperature and leave the milk with sugar and cinnamon for 15 minutes over low heat. We remove to integrate the ingredients well. After this time, we remove the saucepan from the fire and let it cool, since if we pour the hot milk on the slices, the bread could get rid of.
3. Once cold, or semifrÃa, place the slices of mold bread on a high edge tray and pour the preparation, locking it with a strainer to remove the pieces of lemon zest. We let the bread soak up and absorb the milk for approximately 45 minutes, turning it around to obtain a juicy and delicious mold bread torrijas.
4. When there are about 10 minutes to finish the rest time, we preheat the oven to 200 ºC. Once the 45 minutes passed, we take the oven tray, we lined it with vegetable paper, we paint with a little oil, drain the bread and place the slices with milk on it. We beat the egg and paint each slice. Although we have used a single egg, you could also mix an entire egg with a yolk. Done this, bake the bimbo bread to toast until golden brown. To accelerate the process, we recommend activating Grills function and placing the tray in the upper oven center. This step can take you about 10 minutes.
5. When they are golden, we turn the bread, we paint with egg again and let the homemade torrijas bake on that side. Once ready, we remove them from the oven, sprinkle sugar over and go. If you wish, you can also sprinkle a little more cinnamon powder, to your liking! As you can see, these baked mold bread torrijas are much healthier than traditional torrijas because they are not cooked in oil, and the result is spectacular. If you prepare your own mold bread, we recommend you cut slightly thicker slices so that the toasts are much more juicy.
