We show you a very simple vegetable quiche, with healthy and lactose vegetables. To prepare this easy vegetable quiche you only need the oven, eggs and the vegetables you have at home. On this occasion we have used a puff pastry because it is the one we had at hand, but this recipe is usually made with broken dough. Ingredients to make vegetable quiche:
1. We gathered all the ingredients to elaborate the quiche of vegetables without cream. As we have commented on the introduction, for this recipe we have used mass of puff pastry that we had at home, but traditionally it is made with broken dough. 2. We cut the scallion and pepper in small pieces, as indicated in the image, and saute them in the pan for 3 minutes with a little olive oil.
3. Add the peeled carrot and also cut into squares. Let cook for a couple of minutes.
4. To continue the filling of this easy vegetable quiche, add the peeled zucchini and cut into dice. We cook a couple of minutes.
5. Next, we incorporate the eggplant cut more or less like zucchini and add some salt and pepper. We let cook for 5 minutes.
6. On the other hand, we beat the eggs along with a little salt and ground nutmeg. Mix the vegetables with the eggs. We set the puff pastry or broken dough, as you like, and fill with vegetables and beaten egg. We close the boring edges a little, we paint the upper parts of the dough with a little beaten egg and put in the oven at 180ºC for 20 minutes.
7. Once removed from the oven, we let the vegetable quiche rest a few minutes and we can eat it temperate or cold. Good appetite!
