The quiche (according to the country) is a salty cake from French cuisine. This vegan quiche of Tofu is a healthy and vegan alternative (without egg and without dairy) that I want to share with recipes. The mass of the vegan quiche is prepared based on cooked rice and chickpea flour, therefore, it does not carry gluten and has low fat content. It is a good option to take advantage of excess rice. The filling of the vegan quiche with leek is tafu and varied vegetables. But optionally you can add any vegetables to the filling. Ingredients to make vegan vegan quiche:
1. The first thing we have to do to make this vegan vegan quiche is to prepare the dough. To do this, in a large bowl we mix the cooked rice and rice milk. We gradually add the chickpea flour stirring well, until a dense and well -manageable dough is formed.
Trick: Any type of vegetable milk can be used.
2. We grease a round mold with high edges and place the vegan quiche mass inside. With the hands or with a spoon we give the shape of the mold to the mass of the quiche without dairy.
3. We preheat the oven to 180 ºC and bake the mass of the vegan quiche about 5 minutes.
4. Meanwhile, we prepare the filling. We crush the tofu in the blender. We chop the onion, the garlic, the leek and grat the carrot.
Trick: If you use a hard tofu, add several tablespoons of soy milk to get a landfill filling of Tofu softer.
5. We heat the oil in a pan and fry the onion, garlic and leek. Add the carrot and cook until it softens. Next, we add the crushed tofu, the concentrated tomato and salt and pepper. We saute the filling of the vegan quiche easy for another 10 minutes stirring occasionally.
6. Once ready, fill the quiche of tofu and vegetables and bake it about 15 minutes. When golden, we can serve the hot vegetable quiche or let it cool and serve it cold.
