It is not always easy to cook vegetables for children because there can be ingredients that are not so attractive to the little ones. However, potato is a food that everyone usually likes and provides much energy. Broccoli recipes combined with potatoes can have an exquisite result. Ingredients to make potato and broccoli pancakes:
1. We gather all the ingredients to prepare the potato and broccoli pancakes.
2. First, lets cook the broccoli in a pot with plenty of boiling water and a little salt. We let it cook for 10 minutes. Once ready, we drain it and let it cool.
3. In a pan I fry the onion with a little olive oil until it brown.
4. In another pot, we cook the potatoes peeled and cut into not very large pieces. We let them cook until they are soft, about 12 minutes.
5. We put the potatoes in a bowl with a little salt, black pepper and nutmeg. Add the fried onion and crush with a fork until puree.
6. Add the broccoli cut into small trees, the cheese in squares and the beaten egg. We put a little more salt if necessary and mix well.
7. In a baking sheet lined with non-stick paper, we place portions of potato and broccoli pure .
