1. The first thing we do to prepare these soy tacos The shepherd is to hydrate the soybeans: for this a water casserole is boiled with a quarter of onion and bay leaves. Once we are boiling, we turn off the stove, pour the soy and let stand for 10 minutes. After 10 minutes we rinse it with cold water until the water comes out clear and lets drain.
2. For the sauce from the tacos to the pastor, we first boil the guajillos chiles, and once they are soft we grind them with a quarter of onion, two cloves of garlic, salt and broth powder to their liking.
