Ingredients to make crucible tacos to the shepherd:
1. To make the taco recipe to the pastor, in a container add the orange juice, vinegar and achiote. Mix to dissolve the achiote and reserve a bit.
2. In a comal or pan, the tomato, the garlic clove and the clean Guajillo Chile. Turn them back to these ingredients to tatembrate them (roast) on all sides. Guajillo Chile does not require much time, so it will suffice a couple of minutes.
3. When the tomato and the garlic clove are already tatemados, pass them to the blender with the Guajillo Chile, the mixture of orange and achiote juice, salt, pepper to taste and a clove of smell. Blend everything for about 3 minutes and reserve.
4. In a pot with a little oil, sauté the purple onion until slightly browning it. Then, add the cooked cauliflower and move constantly for about 3 minutes. To cook the cauliflower you can do it in salt or steamed water. Do not miss our steamed cauliflower recipe to know the exact cooking times.
5. When cauliflower and onion are slightly golden, add the sauce that you liquefied, mix to integrate all these ingredients and let cook until it reduces the sauce. This will take about 8-10 minutes over medium-low heat.
6. To serve the cruise tacos to the shepherd, prepare corn tortillas and fill them. Then, add chopped coriander, roasted pineapple to taste and the spicy sauce that you like the most.
