Ingredients to make vegetarian mushrooms:
1. In order to start preparing vegetarian wraps without gluten, the first thing we must do is cut the celery stems, already clean and thread, in strips of approximately 1 cm. Then, we cut these cubes strips.
2. Then, with the hands, we separate the mushrooms into strips. I have used Pleurotus mushrooms, but you can use any other fungi to make vegan wraps.
3. We take a large and deep pan, put olive oil to heat and, once hot, sauté the celery. When we note that it becomes transparent, we incorporate the chopped garlic and the apple cut into small dice.
4. We mix well and add the mushroom strips. We cook the filling of vegetarian Wraps constantly stirring with a wooden spoon until the mushrooms release the water and begin to brown.
5. Once we observe that the mushrooms begin to toast, add the chickpeas, the tahini sauce and a splash of Modena vinegar. We mix again and add a little hot water if we see that the filling of vegetarian wraps is too thick. Tahini sauce is made from roasted and ground sesame and, although many people doubt about whether this product contains or Do not gluten, the truth is that it is totally free of this substance, so it is suitable for celiac people. Of course, it is possible that during the elaboration process it has been contaminated, so that it will be essential to review the manufacturer.
6. We turn off the fire when the preparation is ready and add salt, pepper, sweet paprika and fresh chives to taste to give an extra touch of flavor to vegetarian wraps of mushrooms. We remove the pan from the heat and let it cool at room temperature.
7. To mount the vegetarian WRAPS, we heat the corn tortillas in the microwave for 1 minute. You can buy the tortillas, or make them yourself following the simple recipe for wrap that you will find in recipes.
8. Once hot, fill the tortillas by placing a good amount of the previous preparation at the bottom, as shown in the photograph. It should be noted that my tortillas were 30 cm in diameter.
9. We fold the bottom up, completely covering the filling. Then, we take the ends of the tortilla and fold them inwards, as seen in the photograph. Made this, we just enrolled.
10. Praise! We serve the vegetarian mushrooms accompanied by a delicious arugula salad, or the one we like the most!
