They are ideal to have them ready for dinner after a long day of work and are also a great alternative to eat any weekend accompanied by a good salad, potatoes made in the oven or after a good soup. Ingredients to make meat empanada with onion:
1. We peel onion and cut it into finite strips. In a pan we put a splash of olive oil and, when hot, add the onion. Stir occasionally. When starting soft, we add the crumbled broth and white wine. We stir very well, cover and let cook from time to time until the onion is soft.
Trick: If you do not like the onion you can chop it, so you will not find pieces when eating it, although I assure you that it does not notice much but it gives juicy to the dough.
2. We lower the heat and add the minced meat little by little, stirring well so that no balls are made. Mix, raise the fire and cook until the meat is almost made.
3. Add a teaspoon of paprika and fried tomato, mix well and let it cook over intense heat a few minutes stirring so that the filling of the minced meat and onion empanada does not stick. We remove from heat and let the preparation cool completely.
4. When the filling is cold, we beat an egg as if we went to make an tortilla and reserve.
5. Then, we take out a sheet of fridge puff pastry, we extend it and if necessary we stretch with the roller. To make your own dough, you can check the easy puff pastry recipe.
6. We carefully place the filling from the center to the ends, leaving at least one centimeter on each side without filling to bend and close the homemade meat empanada. We extend very well and cover with the other puff pastry sheet.
7. We fold the ends and with the help of a fork we seal them so that the filling is not released. We click the surface with the help of the fork teeth and paint very well with egg and a kitchen brush.
8. We introduce in the preheated oven at 180 ºC and bake for about 30 minutes or until the surface looks golden and crispy. We turn off the oven, let us temper and serve the minced meat and onion empanada.
Trick: It is better to prepare the empanada a little in advance to settle and it is easier to cut the portions without breaking the puff pastry. We can heat it in the microwave and it will be just made.
