This turkey and leeks cake is the perfect way to take advantage of Christmas roasted turkey and thus make a complete and spectacular dish. Ingredients to make pastel of leeks, bacon and puff pastry:
1. We will start by preparing the dish from the beginning, because not everyone has cooked turkey during Christmas. So if we do not have turkey leftovers, we must seal the turkey thigh in a pot with olive oil, salt and ground black pepper. We let it be brown by all parts and remove.
2. In that same pot, add the onion and the green pepper cut into large pieces along with the peeled garlic and let them cook over medium heat for 4 minutes.
3. We put the turkey thigh in the pot and add the fresh thyme.
4. Add bird broth to cover all the ingredients and let the turkey cook for 1 hour and a half over medium heat. When the turkey is ready, we will remove the meat and strain the broth (which we are going to use later).
5. To continue with this recipe of leeks we put a pan on the fire with butter. When we are hot, we add the bacon, let it brown a little and incorporate the leeks cut into not very small pieces, as well as the scallion. We put a little more fresh thyme and let cook for 10-15 minutes over low heat.
6. Once the turkey is cooked, we bone the thigh and separate the meat that will be tender and can be frayed with your hands. Add turkey meat to leeks and move so that ingredients are integrated.
7. Add the flour to our leech cake base, move well to cook for a couple of minutes and cover with the turkey cooking broth. Let cook for 10 more minutes and past this time we strain the entire filling of leeks, turkey and bacon, and reserve the sauce. This thick sauce will be the one that accompanies the leeks and bacon cake.
8. For the puff pastry to be even better, we spread it on a flat surface and crumble a few roasted chestnuts on it. We knead the puff pastry so that embedded chestnut pieces remain. We put the filling of our cake in an oven fountain and cover on top with the puff pastry, covering the entire source. We paint the leeks and bacon with a little beaten egg on top, we click the puff pastry so that it does not swell and put the cake in the oven at 190 ºC about 15-20 minutes, until the puff pastry is golden.
9. To accompany this pastel of leeks, bacon and puff pastry, we sauté some guides cooked with a little butter, salt and ground black pepper. We serve the cake with turkey cooking sauce.
