Ingredients to make gringa to the pastor:

1. To start this simple gringa cake recipe I recommend you have all the ingredients ready in order to facilitate preparation.

2. We disadvantage and perfectly wash the guajillo chiles. Subsequently, we add them to a deep pan with water and a pinch of salt, and boil them over low heat to soften them.

3. Once soft, we drain the peppers and place them in the blender, add the onion, garlic, salt, oregano, fruit juices and apple vinegar. Done this, we crush until we get a homogeneous mixture and reserve to continue with the gringa recipe to the pastor.

4. Subsequently, we wash the pork and cut it into small pictures, place them in a deep container and add the anterior red sauce. Mix and let the meat marinate for an hour in the refrigerator.

Trick: You can leave the meat for a night, since in this way it will take a more intense flavor and color.

5. Once the marinated time has passed, in a pan we place the oil and over low heat we add the meat to cook it little by little. We constantly move to avoid burning the sauce that the meat has, since it can take a slightly bitter taste and the gringa cake would not be equally tasty.

6. When the previous preparation is cooked, add the chopped pineapple and let the taste of the fruit be incorporated into the meat. We continue to stir constantly and remove the filling from the fire once we observe that the pineapple begins to take a golden appearance.

7. In a slow iron, we heat the flour tortillas, fill them by adding some meat, oaxaca cheese, onion and coriander, and cover with another tortilla to form the gringa to the pastor. Let the preparation cook for a few minutes, or until the cheese is completely melted.

8. Finally, we cut the gringa cake in half, we serve it and enjoy it accompanied by our favorite sauce, such as a good green sauce or a red sauce. Bon Appetite!
