Ingredients to make dry tomato hummus:
1. The first thing we have to do to prepare this dry tomato hummus is to hydrate the dry tomatoes in the event that they are not in canned oil and are only dehydrated: for this, we place the dehydrated tomatoes in a plate or container covered with Water for 24 hours, then we dry them well with paper paper and leave them in another bowl or plate covered with oil for a week in the fridge.
Trick: If you use dry tomatoes in oil you will save you much longer in preparing the hummus recipe.
2. Subsequently, we place the chickpeas without draining them too much with a tong of the cooking or canned broth if they are boat in a blender/food processor.
Trick: In the event that the chickpeas are dry you will have to let them soak and cook them previously.
3. Next, we add to the blender the hydrated dry tomatoes (without draining them either too much oil), the garlic cloves parties in half (without the germ of its interior) and the tablespoons of tahini. If you prefer to try a hummus without Tahini here is easy and fast to do it at home.
4. Then, add the cumin, paprika, salt and pepper to taste, lemon jet and parsley leaves or fresh coriander, and crush the hummus of chickpeas and tomato until obtaining a kind of homogeneous puree.
5. Now we check the texture and flavor and rectify with salt or some kind if necessary. If we see that the hummus of dry tomato has been very thick, we can add a little more broth of legumes or extra virgin olive oil to make it more liquid.
6. Finally, with the help of a cooking tongue or cooking spatula we pour the dry tomato hummus in the container or tray that we want and ready! Do not forget to also try these other varied hummus recipes that we recommend:- Hummus of beet
