Minced meat empanadas are a very good option if we have to eat away from home or if we want to leave something ready in advance. If you prepare them during the weekend, you will have more than one dinner accompanying it from a salad or a good soup. In recipes, I share my minced meat prescription to curry made with turkey and mushrooms and a delicious curry touch! Very simple to prepare and with a tremendously juicy filling, you can miss it!

Ingredients to make minced meat to curry:
1. We start peeling the onions and cutting them into large pieces that we will put in the chopper. We chop them until they are almost liquefied. In a wide pan we put a tablespoon of olive oil and put it on the fire. We add the onion and we are cooking.
Trick: The taste of the onion does not notice but it gives a lot of juicy to the filling of the meat empanada to the curry.
2. While we split the turkey sirloin in large pieces that we put in the chopper and leave the minced meat very finite. We add it to the pan along with the onion.
3. We also bacon and put it in the pan. Stir occasionally.
4. We drain the mushrooms, chop them and add them to the pan.
5. Let all the ingredients cook together about five minutes stirring occasionally and add the curry. I usually be quite generous with this spice but the amount must adjust it to your tastes. We mix very well, cook a couple more minutes and remove from the heat until the filling of the oven turkey empanada is temple.
Trick: If you don like the curry you can add the spices you like.
6. Meanwhile we put the egg in a bowl and beat it with the help of a fork or some rods as if we were going tortilla.
7. We take out the sheets of puff pastry from the refrigerator, extend them and pour the cold filling (or at least tempered) on top of them leaving a centimeter on all sides without filling. We distribute well and we smoke are help from a spatula.
8. We cover with the other sheet, fold the edges inward and with the help of a fork we seal them everything around so that the mushroom empanada and Bacon open during the baking. We click the surface with the fork to breathe.
9. With the help of a kitchen brush we paint the edges and the surface with the beaten egg. We introduce the turkey pie in the preheated oven at 180 ºC and bake for about 25-30 minutes or until the puff pastry looks golden.
