If you feel like eating rice differently, you will love these stuffed rice balls. The baked rice balls are crispy on the outside with the battering without egg that we are going to do, and juicy and with a lot of flavor inside. The rice balls or croquettes are going to fill them with mushrooms, olives and vegan cheese, but you can use your imagination and prepare the filling that you like best. These baked rice balls look good as an incoming or a snack so cheer up and follow the instructions to make them in recipes.

Ingredients to make baked rice balls: |
2 cups of cooked rice (350 grams) 2 cloves of garlic 1 onion 150 mushrooms 5 black 5 green 1 teaspoon of thyme 5 sheets of basil 1 jet of white wine ½ teaspoon of salt 2 tablespoons Oil soperas ¼ cup of grated vegan cheese ¼ cup of chickpea flour ¼ cup of breadcrumbs |

Ingredients to make baked rice balls:
1. Pica the onion and garlic, cut the mushrooms into small pieces and cut the olives into slices.
2. Heat a pan with oil and sauté the onion and garlic. Add the mushrooms and olives and kitchen 3-4 minutes stirring occasionally.
3. Add the thyme, basil, salt and a jet of wine. Cook the mushrooms over medium-high heat until lists are ready and the wine evaporates.
4. Take a handful of rice cooked with your hands. For this recipe it is better to let the boiled rice pass a little to cook so that it sticks well. It forms a ball and crush it a little making a hole in the center.
5. Place one or two tablespoons of filling, a pinch of vegan grated cheese and make the ball again. You may need a little more rice to close the ball. Repeat this step until the ingredients are over.

6. To batter the stuffed rice balls without egg mixture in a bowl the chickpea flour with a little water. Add the water little by little continuously beating with a fork until a liquid mixture is formed with the consistency of a beaten egg.
7. Each of the stuffed rice snacks passes through the mixture of chickpea flour and then through the breadcrumbs.
8. Heat the oven to 180 ºC and bake the rice balls battered for 30 minutes (or heat a pan with oil and fry the balls until brown).
